Converts Protobuf Descriptors.Descriptor to logical type Schema.

Default-value path emission. ARRAY contributes no index — descending into its element type uses the parent path directly. flink.wrapped wrapper structs (_RepeatedWrapper, _ElementWrapper, _OneofWrapper) are also transparent: see convertWrapperPayload, which walks the wrapper's "value" payload (regular field or oneof) directly with the parent indexPath. All other container conventions follow LogicalType.getDefaultValues().
